How Long Does Cooked Rice Last in the Fridge?

How long does rice last in the fridge? Cooked rice keeps 3 to 4 days if refrigerated within 2 hours. USDA guidance, leftover rice safety and freezing tips.

Cooked rice lasts 3 to 4 days in the fridge when it is refrigerated within 2 hours of cooking and kept at 40°F (4°C) or below. That follows the USDA's guidance for leftovers, and it applies to white, brown and fried rice. If you will not eat it in that time, freeze it.

With rice, how fast you cool it matters as much as how long you keep it. This guide explains why leftover rice needs extra care, how to store it so it lasts the full 3 to 4 days, how to reheat it safely and how long it keeps in the freezer.

Cooked Rice Storage Times

Rice Refrigerator, 40°F (4°C) Freezer, 0°F (-18°C)
Plain cooked rice (white or brown) 3 to 4 days 1 to 2 months for best quality, up to 6 months
Fried rice with egg, meat or seafood 3 to 4 days 2 to 3 months
Rice dishes with meat or poultry (casseroles, burrito bowls) 3 to 4 days 2 to 3 months
Takeout rice 3 to 4 days from when it was cooked 1 to 2 months
Cooked rice left at room temperature Discard after 2 hours Do not freeze

Times are based on the USDA FoodKeeper and USDA FSIS leftovers guidance. The FoodKeeper lists 3 to 4 days for leftovers such as cooked rice; its separate entry for plain cooked rice allows up to 4 to 6 days. We use the more conservative 3 to 4 days. Freezer times are for quality: food kept at 0°F (-18°C) stays safe indefinitely.

Why Leftover Rice Needs Extra Care

Rice is not riskier because of how long it sits in the fridge. It is riskier because of what can happen before it gets there.

Uncooked rice can contain spores of Bacillus cereus, a bacterium common in soil. According to University of Florida IFAS Extension, these spores are heat-resistant enough to survive cooking. When cooked rice cools slowly or sits at room temperature, the spores can germinate and the bacteria can multiply. As they grow, they can produce toxins. The U.S. Food and Drug Administration notes that the toxin linked to vomiting illness is heat-stable, which means reheating rice that sat out too long does not make it safe.

The practical takeaway:

  • Cool rice quickly and get it into the fridge within 2 hours of cooking.
  • Do not leave rice in the rice cooker on "warm" for hours and then refrigerate it as leftovers.
  • Throw out rice left out overnight, even if it looks and smells fine.

This is not a reason to avoid leftover rice. It is a reason to treat it like any other perishable leftover.

Pro tip: Spread hot rice in a thin layer on a sheet pan or in a wide, shallow container for 10 to 15 minutes before covering it. It cools much faster than a deep pot, then you can pack it and refrigerate it well within the 2-hour limit.

Is It Safe to Eat Leftover Rice?

Yes, leftover rice is safe to eat if you follow three rules:

  1. It went into the fridge within 2 hours of cooking, or within 1 hour if the room was above 90°F (32°C). This is the standard USDA limit for perishable food.
  2. It has been in the fridge 4 days or less at 40°F (4°C) or below.
  3. You reheat it to 165°F (74°C), the USDA target for reheating leftovers, until it is steaming hot throughout.

If any of these is in doubt, throw it out. Rice is cheap; food poisoning is not.

How to Store Cooked Rice in the Fridge

  • Use shallow containers. USDA advises dividing large amounts of leftovers into small, shallow containers so they cool quickly. A deep container of hot rice can stay warm in the center for hours.
  • Cover it once it has cooled. An airtight lid keeps the rice from drying out and absorbing fridge odors.
  • Label the date. Rice looks the same on day one and day five. A date on the lid, or a note in an inventory app, removes the guesswork.
  • Keep your fridge at 40°F (4°C) or below. Our guide on what temperature a fridge and freezer should be explains how to check.
  • Store takeout rice the same way. Move it out of the carton into a shallow container and count the days from when you got it.

Rice served with other dishes follows the shorter of the two clocks. Rice next to chicken, for example, lasts as long as the chicken does. See our guide on how long cooked chicken is good in the fridge, and how long ground beef lasts in the fridge for rice bowls and burrito fillings.

How to Reheat Leftover Rice

Reheat only the portion you will eat, and heat it until it is steaming hot all the way through, reaching 165°F (74°C).

  • Microwave: Put the rice in a covered microwave-safe dish with a tablespoon or two of water per cup of rice. Heat on high, stirring halfway, until steaming throughout.
  • Stovetop: Add rice and a splash of water or broth to a pan, cover and heat over medium, stirring occasionally, until hot.
  • Fried rice: Day-old refrigerated rice is ideal for fried rice. Stir-fry it in a hot pan until every grain is heated through.

Avoid reheating the same rice more than once. Each round of cooling and warming gives bacteria another chance to grow, so portion leftovers before you reheat them.

How Long Does Rice Last in the Freezer?

If you cook rice in batches, the freezer is the better place for anything you will not eat within a few days. Cooked rice freezes very well and reheats almost like fresh.

For best quality, use frozen cooked rice within 1 to 2 months. The USDA FoodKeeper lists up to 6 months for plain cooked rice, and frozen rice stays safe beyond that at 0°F (-18°C), but it gradually dries out and picks up freezer flavors.

To freeze it:

  1. Cool the rice quickly, as described above.
  2. Pack it flat in freezer bags in 1-cup or meal-sized portions, pressing out the air.
  3. Label with the date and freeze.
  4. Reheat straight from frozen in the microwave with a splash of water, no thawing needed.

Signs Cooked Rice Has Gone Bad

Throw rice out if you notice:

  • A sour or unusual smell
  • A slimy or sticky texture that was not there when it was cooked
  • Mold, which can show up as fuzzy spots in green, black or white
  • Hard, dried-out grains that suggest it has been stored too long uncovered

Keep in mind that rice can be unsafe without any of these signs. The toxins produced by Bacillus cereus do not change the look or smell of rice. That is why the 2-hour and 4-day limits matter more than a sniff test.

Uncooked Rice in the Pantry

Dry rice is a different story. Uncooked white rice keeps about 2 years in a cool, dry pantry, according to the USDA FoodKeeper. Brown rice contains more natural oils and has a shorter shelf life, so buy it in quantities you will use and store it in an airtight container. Once cooked, both follow the same 3 to 4 day fridge rule.

FAQ

Is it safe to eat leftover rice?

Yes, if it was refrigerated within 2 hours of cooking, eaten within 3 to 4 days and reheated to 165°F (74°C). Discard rice that sat out at room temperature for longer than 2 hours.

Can you eat cooked rice after 5 days in the fridge?

It is safest not to. USDA guidance for leftovers is 3 to 4 days. Freeze rice you do not expect to finish in that time.

Can you freeze cooked rice?

Yes. Cool it quickly, pack it flat in freezer bags and use it within 1 to 2 months for the best texture. Reheat it from frozen with a splash of water.

Why is leftover rice risky?

Spores of Bacillus cereus can survive cooking and multiply if rice cools slowly or sits out. Some toxins they produce are not destroyed by reheating, so fast cooling is the key step.

How long can cooked rice sit out?

No more than 2 hours at room temperature, or 1 hour if it is above 90°F (32°C). After that, throw it out.

Make Leftover Rice a Habit, Not a Risk

Cooked rice is one of the easiest leftovers to make work: cool it fast, refrigerate it within 2 hours, eat it within 3 to 4 days or freeze it in portions. The hard part is remembering when you made it. Freezer Inventory Tracker logs leftovers in the fridge or freezer with the date and sends an expiry reminder, so the rice gets eaten while it is still good.
