How to Freeze Potatoes (And Why Some Methods Fail)

Can you freeze potatoes raw? Ideally, no. Raw potatoes have a high water content and enzymes that cause them to turn black and convert starches into sugars in the freezer, leaving you with an oddly sweet, gritty vegetable.

The Rule: Cook Partially or Fully

To stop the enzyme action, heat is required.

Freezing French Fries or Wedges

  1. Par-Boil: Cut your potatoes. Boil them for about 3-5 minutes (they should still be firm).
  2. Dry: Drain and let them dry completely.
  3. Oil: Toss with a little oil.
  4. Flash Freeze: Freeze on a tray.
  5. Bake later: Roast the frozen fries in the oven until crispy.

Freezing Mashed Potatoes

Mashed potatoes freeze wonderfully because the fat (butter/cream) protects the texture.

  • Scoop individual servings onto a baking sheet, freeze until solid, then bag. These are perfect sides for a quick dinner.

Twice Baked Potatoes

These are the kings of the freezer. Make the whole recipe, cool, freeze, and then just reheat in the oven for an easy comfort meal.
